Firstly, posts are linked to a date and are structured around categories and tags.

This is one of the key differences. They are meant to be used for a blogging system. Although you can, in practice, use posts as pages, most themes, WordPress’s built-in systems, and its add-ons will handle them as planned. 

Opting to use it differently will incur some extra and unnecessary work and costs.

If you need to have content displayed in chronological order, but they are not blog posts, try to create custom post types. This will make sure you don’t have headaches down the road.
